Kokoda (pronounced ko-kon-da in Fiji) is also known as 'Coconut Ceviche' and is a delicate, delicious Fijian favourite which is usually served as a starter on a bed of lettuce or with a fresh fruit salad. Kokoda is a simple yet delicious seafood dish that is quick and easy to make. It is a traditional Fijian dish of raw fish, where the fish is cooked in lemon or lime juice and coconut cream.
